Asian Bistro's Rama Chicken Recipe

Rama Chicken is a very simple recipe that is fairly healthy with chicken breast and lots of vegetables. The peanut sauce gives you added flavor and protein and the benefits of Coconut milk are heart healthy. This recipe can definitely be done at home in 30 minutes or less. The peanut sauce can be stored in an airtight container in the fridge for up to 1 week.

RAMA CHICKEN

Serves 4

Ingredients

  • 1 lb boneless skinless chicken breast
  • 2 cups shredded carrots
  • 2 cups broccoli florets
  • 1 cup sliced onions
  • 2 cups coconut milk
  • 1/2 cup water
  • 2 cups peanut butter
  • 1/8 to 1/2 cup sugar, depending on your tastes
  • Salt, to taste
  • 4 cups Jasmine rice, cooked

Directions

  1. Slice chicken breast into thin pieces and boil 
  2. Steam broccoli, carrots, onions 
  3. In a medium saucepan, combine coconut milk, water, peanut butter, sugar and salt. Cook on low until thick, keep stirring, take off heat once ingredients are combined. 
  4. Serve chicken with vegetables and pour peanut sauce over. 
  5. Serve on a bed of Jasmine rice or with Jasmine rice on the side.
